These crispy roasted chickpeas are the ultimate healthy snack. The secret is a two-stage roasting method: first you bake them until golden, then you let them rest in the turned-off oven for extra crunch.
Toss them with olive oil, salt, and your favorite spices right before serving. They are perfect on their own, over salads, or as a crunchy topping for soups.
Ingredients
Converted amounts are rounded.
Method
- Preheat the oven to 400°F. Line a large rimmed baking sheet with parchment paper. Pat the chickpeas as dry as possible with a clean towel or paper towels. Discard any loose skins that come off, but don't bother removing them all.
- Spread the chickpeas evenly on the baking sheet. Roast until crisp and golden in spots, shaking the pan every 10 minutes, about 20–25 minutes total.
- Give the pan one more shake, then turn off the oven. Leave the chickpeas inside the turned-off oven for another 10–15 minutes, checking so they don't burn (watch the edges). This step makes them extra crunchy and helps them stay crunchy.
- Remove the chickpeas from the oven and transfer to a wide, shallow serving bowl. Toss with olive oil, salt, and any optional seasonings. Let cool completely, then store in a sealed bag with the air squeezed out for up to 1 month. Serve with a drink to wash them down!
💡 Tips
- For extra crunch, make sure the chickpeas are very dry before roasting.
- Watch the chickpeas during the last phase—the ones at the edges may darken faster.
- Customize the seasoning: try smoked paprika, cumin, or garlic powder.
