This recipe transforms simple rolled oats into a creamy, fall-inspired breakfast that requires no cooking. The combination of pumpkin puree, warm pumpkin spice, and maple syrup creates a comforting flavor, while chia seeds add a pudding-like texture.
Just mix everything in a jar before bed, let it rest in the fridge overnight, and in the morning you have a grab-and-go meal. Top it with a swirl of yogurt and crunchy pecans for extra richness and texture.
Method
- In a sealable jar or bowl, combine the rolled oats, almond milk, Greek yogurt, pumpkin puree, chia seeds, maple syrup, vanilla extract, and pumpkin spice. Stir well until all ingredients are evenly mixed.
- Cover the jar or bowl and place it in the refrigerator. Let it soak for at least 2 hours, but for best results, leave it overnight (about 8 hours).
- When ready to serve, give the oats a quick stir. Top with a spoonful of yogurt and a sprinkle of chopped pecans. Enjoy immediately.
💡 Tips
- You can use any milk you like – dairy, oat, or soy work well too.
- For extra sweetness, add more maple syrup or a drizzle of honey before serving.
- If you don't have pumpkin spice, mix ¼ tsp cinnamon + ⅛ tsp nutmeg + a pinch of cloves.
