This effortless recipe turns simple cherry tomatoes into a vibrant side dish that's as beautiful as it is delicious. The tangy Italian dressing soaks into the tomatoes while the parsley and garlic add layers of fresh flavor.
Letting the tomatoes rest for a few hours (or even overnight) allows the marinade to work its magic, making every bite pop with taste. Serve them alongside grilled meats, toss into salads, or pile onto crusty bread for a quick appetizer.
Ingredients
Converted amounts are rounded.
Method
- Rinse the cherry tomatoes and cut each one in half.
- Place the halved tomatoes in a glass mixing bowl or a quart-sized glass jar with a lid.
- Add the finely chopped parsley and minced garlic to the bowl.
- Pour in 1 1/2 cups of light Italian dressing, or enough to just barely cover the tomatoes. Stir to combine everything.
- Cover the bowl or jar and let the tomatoes marinate at room temperature for at least 2 to 4 hours. For best results, refrigerate overnight.
💡 Tips
- For a prettier presentation, use a mix of red, yellow, and orange cherry tomatoes.
- Leftover marinated tomatoes are delicious on toasted bread as bruschetta.
- If using a jar, shake it gently once in a while to redistribute the marinade.
