This loaf is a wonderful way to use up summer zucchini, combining it with the natural sweetness of dates and the nutty crunch of hazelnuts. The crème fraîche, whipped with a touch of lemon juice and zest, adds a bright, creamy contrast that elevates every slice.
The recipe calls for a 30-cm (12-inch) loaf pan; if using a standard 9-inch pan, you may need to adjust the baking time or leave out a bit of batter. Let the loaf cool completely before slicing for the best texture.
Ingredients
Converted amounts are rounded.
Method
- Preheat the oven to 350°F.
- In a large bowl, sift together the flour, baking powder, salt, and cinnamon.
- In another bowl, whisk the coconut sugar and coconut oil until well combined. Add the eggs one at a time, whisking after each addition.
- In a third bowl, mash the pitted dates with a wooden spoon into a paste. Add the date paste to the egg mixture and mix until smooth.
- Stir in the grated zucchini and vanilla paste until evenly distributed.
- Gently fold in the flour mixture and the chopped hazelnuts until just combined—do not overmix.
- Grease a large loaf pan (30 cm / 12 inches) and pour in the batter. Bake for 60–70 minutes, until golden brown and a toothpick inserted into the center comes out clean.
- Let the loaf cool completely in the pan on a wire rack.
- While the loaf cools, whip the crème fraîche with about 1 tablespoon of lemon juice until it reaches a whipped-cream consistency.
- Once cool, turn the loaf out onto a board and cut thick slices. Serve each slice with a dollop of the lemon crème fraîche, a sprinkle of lemon zest, and some crushed hazelnuts.
💡 Tips
- For a dairy-free version, replace the crème fraîche with a thick coconut yogurt whipped with lemon juice.
- If your dates are very dry, soak them in warm water for 10 minutes, then drain well before mashing.
- The loaf keeps well for 2–3 days wrapped in foil at room temperature.
