This stovetop granola is the perfect homemade breakfast or snack when you're short on time. With just a handful of pantry staples, you can have crunchy, toasty clusters in minutes.
No oven required! The secret is toasting the oats in a skillet with coconut oil, then adding honey and nuts for a naturally sweet, crispy result. You can customize it with your favorite add-ins like dried fruit or seeds.
Ingredients
Converted amounts are rounded.
Method
- Prepare all ingredients and line a baking sheet with parchment paper.
- Melt the coconut oil in a 12-inch non-stick skillet over medium heat.
- Add the rolled oats and cook, stirring and spreading them evenly almost constantly, until they become slightly toasty and crisp—just lightly deepened in color—about 4 to 6 minutes.
- Reduce the heat to medium-low. Pour in the honey and salt, and stir immediately.
- Continue cooking, stirring and spreading constantly, until the mixture just starts to turn lightly golden, about 1 minute.
- Add the chopped pecans and shredded coconut, and cook, stirring constantly, until the mixture is barely golden brown, about 1 minute longer.
- Immediately pour the granola onto the prepared baking sheet and spread it out. Press down with a spatula to form clusters.
- For quicker setting, place the baking sheet in the fridge or freezer for about 5 minutes until cool and crisp. Store in an airtight container at room temperature or in the fridge for longer shelf life.
💡 Tips
- Use a large non-stick skillet to ensure even toasting.
- Stir constantly to prevent burning, especially after adding honey.
- For extra crunch, toast the pecans and coconut separately before adding.
