This mug cake is the perfect solution when you're craving something sweet but don't want to bake a whole cake. It's rich, fudgy and surprisingly healthy, made with almond flour and sweetened with maple syrup.
You can enjoy it plain, or dress it up with coconut whipped cream, fresh berries or a dusting of powdered sugar. It's a great treat for one, and you can have it ready in under five minutes.

Method
- In a measuring cup or a small bowl, whisk together the almond flour, cacao powder, maple syrup, coconut oil, vanilla extract and the egg until you have a smooth batter.
- Pour the batter into a microwave-safe mug.
- Microwave on high for 1 to 2 minutes, or until the cake is cooked through and springs back lightly when touched.
- Let it cool for a minute or two, then enjoy plain or top with coconut whipped cream, a dusting of powdered sugar, fresh berries, chocolate chips or a little orange zest.
💡 Tips
- Use a large mug to avoid overflow during cooking.
- Adjust the sweetness by adding more or less maple syrup.
- If you don't have cacao powder, you can use unsweetened cocoa powder.
