This dessert turns a humble fruit into a showstopper. The trick is the mint sugar, made right at the table in a pestle and mortar, releasing incredible aromas.
Serve the pineapple slices on a large plate with a bowl of yogurt on the side. The contrast of sweet fruit, cool yogurt, and punchy mint sugar is unforgettable.
Ingredients
Converted amounts are rounded.
Method
- Choose a ripe pineapple: it should smell sweet and the leaves should pull out easily. Cut off both ends, then peel the skin with a knife, removing any dark spots. Cut the pineapple into quarters and remove the tough core. Slice each quarter lengthwise as thinly as possible.
- Arrange the slices in one or two layers on a large plate. Do not refrigerate; set aside at room temperature.
- At the table, place the caster sugar in a pestle and mortar. Pick the mint leaves and add them to the sugar. Bash vigorously until the sugar turns green and smells wonderfully minty, about 1 minute.
- Sprinkle the mint sugar evenly over the pineapple slices. Serve immediately, with a bowl of natural yogurt on the side if desired.
💡 Tips
- For a vegan version, skip the yogurt or use a plant-based alternative.
- If you don't have a pestle and mortar, crush the mint and sugar in a bowl with the back of a spoon.
- Leftover mint sugar is great on other fruits like melon or strawberries.
