This recipe brings the bold, herbaceous flavors of Argentina right to your kitchen. The chimichurri sauce, made with fresh parsley, garlic, oregano, and a kick of red pepper flakes, both tenderizes the chicken and adds a vibrant finish.
You can cook the chicken on a hot grill for a smoky char or in a skillet for a quick weeknight meal. Either way, the result is tender, flavorful chicken that pairs beautifully with grilled vegetables or a simple salad.
Ingredients
Converted amounts are rounded.
Method
- Prepare the chimichurri sauce: In a bowl, combine the parsley, garlic, olive oil, red wine vinegar, dried oregano, 1/2 tsp salt, black pepper, and red pepper flakes. Stir well, cover, and refrigerate for at least 2 hours or overnight.
- Place the chicken thighs in a mixing bowl. Add 1/2 tsp salt and half of the prepared chimichurri sauce. Toss to coat, cover, and marinate for 15 minutes at room temperature, or refrigerate overnight if making ahead.
- To grill the chicken: Preheat your grill to medium-high heat. Place the chicken smooth-side-down on the hot grates. Cover the grill and cook for 5–7 minutes per side, until an instant-read thermometer inserted into the thickest part reads 165°F.
- To sauté the chicken: Heat a heavy skillet over medium heat and add 1 tablespoon olive oil. Place the chicken smooth-side-down and cook for 5–7 minutes per side, until cooked through and the internal temperature reaches 165°F.
- To serve, arrange the cooked chicken on a platter. Spoon the remaining chimichurri sauce over the top and serve immediately.
💡 Tips
- For best flavor, let the chimichurri sauce rest in the fridge for at least 2 hours or overnight before using.
- If using fresh oregano instead of dried, add it just before serving to keep its bright flavor.
- The chicken can be marinated overnight for extra tenderness and deeper flavor.
