This pudding is a perfect way to enjoy a healthy, satisfying treat without any refined sugar. The bananas provide natural sweetness and a creamy texture, while the hemp and chia seeds add a boost of protein, fiber, and omega-3s.
It comes together in just a few minutes with a food processor, then needs a couple of hours in the fridge to set. You can make it ahead for a quick breakfast or a guilt-free dessert any day of the week.
Ingredients
Converted amounts are rounded.
Method
- Place the peeled bananas, berries, and coconut milk in a food processor. Blend until smooth. Taste and, if you prefer more sweetness, add maple syrup or pitted dates to taste, then blend again.
- Add the hemp seeds, chia seeds, and ground cinnamon to the food processor. Pulse a few times just until combined—do not overmix.
- Divide the mixture evenly among 3–4 serving dishes (small jars or bowls work well). Cover each dish with a lid or plastic wrap.
- Refrigerate for at least 2 hours, or preferably overnight, until the pudding thickens and sets. It will keep in the refrigerator for 3–4 days.
💡 Tips
- If using frozen berries, thaw them completely and drain any excess liquid before blending to avoid a watery pudding.
- For a thicker pudding, let it chill overnight—the chia and hemp seeds will absorb more liquid.
- Serve with extra fresh berries or a drizzle of maple syrup on top, if desired.
