This salad brings together the earthy bitterness of kale with the bright, citrusy pop of kumquats. The toasted breadcrumbs add a satisfying crunch, while the tahini-maple dressing ties everything together with its creamy, nutty sweetness.
It's perfect as a side for veggie burgers, pizza, or spring rolls, but you can also turn it into a heartier meal by adding your favorite protein, like quinoa or crispy chickpeas. Best enjoyed fresh, but leftovers keep well in the fridge for a few days.
Method
- Heat a large skillet over medium heat. Once hot, add half of the olive oil (1/2 tbsp), the breadcrumbs, a pinch each of salt and pepper, and the vegan parmesan cheese.
- Sauté, stirring frequently, until the breadcrumbs are browned and crisp, about 5 minutes. If they brown too quickly, lower the heat. Set aside to cool.
- In a large mixing bowl, combine the kale with the lemon juice and the remaining olive oil (1/2 tbsp). Use your hands to massage the kale, breaking down its texture slightly.
- In a separate bowl, whisk together the tahini, lemon juice, orange juice, maple syrup, and a pinch of salt. Add water or almond milk a little at a time, whisking, until the dressing is pourable. Taste and adjust seasonings as needed; set aside.
- Add the sliced kumquats (reserving a few for garnish), chia seeds, and half of the toasted breadcrumbs to the kale. Pour in most of the dressing and toss to combine, reserving a bit for serving.
- Serve immediately, garnished with the reserved kumquats and breadcrumbs, and drizzle with the remaining dressing.
💡 Tips
- Massaging the kale is key—it softens the leaves and makes them more tender.
- If you don't have kumquats, you can substitute with sliced mandarin oranges or a mix of orange zest and lemon juice.
- For a gluten-free version, use gluten-free breadcrumbs.
