Method
- Prepare the Russian dressing: In a medium bowl, combine the mayonnaise, ketchup, horseradish, Worcestershire sauce, sugar, and paprika. Whisk until smooth. Season with kosher salt and freshly ground black pepper to your taste.
- Assemble the sandwiches: Lay out the 8 slices of rye bread. Spread softened butter on one side of each slice. On the unbuttered side of four slices, spread a generous amount of the prepared Russian dressing. Layer the Swiss cheese, corned beef, and sauerkraut evenly over the dressing.
- Top with the remaining four slices of bread, butter-side up, dressing-side down. Gently press each sandwich.
- Grill the sandwiches: Heat a large skillet or griddle over medium heat. Cook each sandwich for about 3 minutes per side, or until the bread is golden brown and toasted, and the Swiss cheese is fully melted and gooey.
💡 Tips
- For an even richer flavor, you can lightly toast the corned beef slices before assembling the sandwiches.
- If you don't have rye bread, pumpernickel or a hearty sourdough bread also works well.
- Drain the sauerkraut well to prevent the sandwich from becoming soggy.
