Classic Gluten-Free Spice Layer Cake

A moist, aromatic spice cake made effortlessly with a gluten-free yellow cake mix, featuring warm cinnamon, ginger, and a hint of molasses.

This spice cake is a comforting classic, perfect for any occasion. The combination of cinnamon, cloves, nutmeg, and crystallized ginger creates a warm, inviting aroma, while the molasses adds a subtle depth of flavor. It's so delicious that even those who don't follow a gluten-free diet will love it.

Using a high-quality gluten-free yellow cake mix simplifies the process, ensuring a tender crumb without the fuss. The cake is soft and moist, with a beautiful golden-brown top. Serve it with a creamy frosting or a simple dusting of cinnamon for a delightful treat.

Method

  1. Preheat the oven to 350°F. Grease the bottoms of two 8-inch round cake pans or one 9x13-inch pan.
  2. In a large bowl, beat the butter with half of the cake mix, the minced ginger, and the spices until well combined.
  3. Add the molasses and one egg, beating until incorporated.
  4. Add the remaining eggs one at a time, beating well after each addition.
  5. Add the milk alternately with the remaining cake mix, starting and ending with the cake mix, in three additions. Beat until smooth, scraping the bowl after each addition.
  6. Pour the batter into the prepared pans. Bake the layers for 40 to 45 minutes, or the sheet cake for 35 to 40 minutes, until the top is golden brown and firm to the touch. The internal temperature should read between 210°F and 212°F.
  7. Remove from the oven and let cool in the pans for 5 minutes, then turn out onto a wire rack to cool completely before frosting. Serve with German buttercream or cream cheese frosting, and a light dusting of cinnamon on top.

💡 Tips

  • For best results, ensure all ingredients are at room temperature before starting.
  • If you don't have crystallized ginger, you can substitute with 1 teaspoon of ground ginger.
  • To check doneness, insert a toothpick in the center; it should come out clean.
