This homemade dressing brings together the richness of ripe avocado with the bright acidity of lime and the freshness of cilantro. It's thick, creamy, and full of flavor, yet made with simple, wholesome ingredients.
Perfect for drizzling over a southwest salad with black beans, corn, and grilled chicken, or as a dip for vegetable sticks. It comes together in minutes in a blender and keeps well in the fridge for up to ten days.
Method
- Scoop the flesh from the avocados and place it in a blender.
- Add the lime juice, cilantro, sour cream, salt, black pepper, garlic powder, and onion powder.
- Pulse the blender a few times to start breaking down the ingredients, then blend until smooth.
- Check the consistency: if the dressing is too thick, add water 1 tablespoon at a time and blend again until you reach the desired thickness. The amount of water needed depends on how juicy the limes are.
- Taste and adjust seasoning with extra salt and pepper if needed.
- Transfer the dressing to an airtight container and store in the refrigerator for up to 10 days.
💡 Tips
- For a thinner dressing, add more water, 1 tablespoon at a time, until you reach the desired consistency.
- Use the dressing as a dip for raw vegetables or as a spread on sandwiches and wraps.
- If you prefer a milder cilantro flavor, use only half the bunch.
