Ingredients

Method
- Place all ingredients except the cream cheese into a 6-quart or larger slow cooker. Stir well to combine. Cover and cook on low for 7 hours or on high for 3 hours.
- Remove the chicken from the slow cooker and transfer to a plate or cutting board. Using two forks, shred the chicken into pieces. Alternatively, cut it into bite-size chunks. Return the shredded chicken to the slow cooker.
- Add the cream cheese to the slow cooker and stir until fully melted and incorporated. Taste and adjust seasoning with more salt or spices if needed.
- Cover and cook for another 10–15 minutes until heated through. Serve warm, topped with fresh cilantro, shredded cheese, and/or sour cream. Accompany with cornbread or cornbread muffins. Store leftovers in the refrigerator for up to 1 week; reheat in the microwave or on the stove.
💡 Tips
- For a thicker chili, remove the lid during the last 30 minutes of cooking.
- To make it spicier, add an extra jalapeño or a pinch of cayenne pepper.
- This chili freezes well for up to 3 months.
