These little cheese pies are a staple in every Greek home. The combination of salty feta, creamy cheese, and fresh herbs wrapped in crispy phyllo is simply irresistible.
They are quick to prepare and even quicker to disappear. Serve them warm with a sprinkle of mint for a delightful treat any time of the day.
Ingredients
Converted amounts are rounded.
Method
- In a bowl, crumble the feta with a fork.
- Add the cream cheese, oregano, mint, olive oil, and pepper, and mix well until smooth.
- Stack the phyllo sheets on a work surface and cut them from the long side into strips about 5 cm wide.
- Place one strip on top of another, and bring the short side toward you.
- Place 1 tablespoon of filling at the bottom, and start folding diagonally to form a triangle, leaving a small piece of phyllo at the end without wrapping it.
- Brush the leftover phyllo with the diluted flour, seal the triangle, and set aside.
- Repeat with the remaining strips and filling.
- Heat a deep pan over medium-high heat, add the sunflower oil, and let it get hot.
- Line a tray with paper towels and set aside.
- Fry the triangles in batches for 2-3 minutes until golden and crispy.
- Remove them with a slotted spoon and place on the prepared tray.
- Serve with fresh mint leaves.
💡 Tips
- Make sure the oil is hot enough before frying, so the phyllo becomes crispy and not oily.
- If you prefer, you can bake them in the oven at 350°F for about 20 minutes instead of frying.
- Prepare the filling in advance and keep it refrigerated until ready to use.
