Crunchy Coconut Granola with Less Sugar

A crunchy, lightly sweetened granola made with coconut oil, flakes, nuts, seeds, and dried fruit – perfect for a healthy breakfast.

This homemade granola is a far cry from the sugary store-bought versions. By using natural sweeteners like maple syrup and dried fruit, we've cut the sugar dramatically while keeping all the crunch and flavor.

It's packed with low-GI ingredients like rolled grains, nuts, and seeds, which help keep your energy steady throughout the morning. Enjoy it over yogurt, with milk, or sprinkled on fruit.

Method

  1. Preheat the oven to 350°F/fan300°F/gas 3½. In a small saucepan, gently warm the coconut oil until it melts and becomes pourable. Remove from heat and let it cool slightly.
  2. In a large bowl, mix together all the dry ingredients. In a separate small bowl, stir the maple syrup and vanilla into the melted coconut oil.
  3. Pour the coconut oil mixture over the dry ingredients and mix well with your hands, lifting and tossing until everything is lightly coated. Taste and add more maple syrup if you like.
  4. Line four baking sheets with parchment paper and spread the granola evenly in a single layer on each (or use two sheets and bake in batches). Avoid overcrowding for even baking.
  5. Bake for 15 minutes, stirring gently halfway through. Keep an eye on it after 10 minutes to prevent burning.
  6. Remove the baking sheets from the oven and let the granola cool completely. Transfer to an airtight container and serve over yogurt or poached fruit.

💡 Tips

  • Use a large baking sheet to avoid overcrowding, which helps the granola get crunchy.
  • Store in an airtight container for up to two weeks.
  • Feel free to swap the dried fruit and nuts with your favorites.
