Ingredients
Converted amounts are rounded.
Method
- Heat the olive oil in a skillet over medium heat. Season each chicken fillet with a pinch of salt. Sear the chicken on both sides for about 3-5 minutes per side, depending on thickness, until golden brown all over. Transfer the chicken to a plate.
- In the same skillet, add the butter and sliced mushrooms. Fry for 3-5 minutes, until they just begin to soften. Transfer the mushrooms to the plate with the chicken, cover, and keep warm.
- Add the finely chopped shallot to the skillet and cook for 4 minutes, stirring occasionally. Pour in the champagne, stirring well and scraping up any browned bits from the bottom of the pan for extra flavor. Season with salt and pepper, then let it simmer for about 10 minutes.
- Add the milk (or cream) and simmer for 2-3 minutes. If using milk: mix the cornstarch with 1 tablespoon of water, then pour into the center of the pan and stir into the sauce until it thickens slightly.
- Return the chicken and mushrooms to the skillet, along with any accumulated juices. Coat everything in the creamy sauce. Sprinkle with fresh parsley and serve immediately.
💡 Tips
- For a richer sauce, use heavy cream instead of milk and omit the cornstarch.
- If you don't have champagne, any dry sparkling white wine works well.
- Make sure not to overcook the chicken; it should be tender and juicy.
