Greek Eggplant & Beef Stew with Aromatic Spices

A hearty Greek stew where tender beef and sweet eggplant simmer in a rich tomato sauce infused with cinnamon, cumin, and fresh herbs.

This old-fashioned stew brings together the earthy sweetness of eggplant and the deep flavor of beef chuck, slowly cooked until the meat is fork-tender. The combination of cinnamon, cumin, and nutmeg adds a warm, aromatic note that makes this dish uniquely Greek.

Serve it over mashed potatoes or crispy fries to soak up every last drop of the luscious sauce. It's a one-pot meal that fills the kitchen with an irresistible aroma and is perfect for a cozy dinner.

Method

  1. Preheat the oven to 325°F/325°F.
  2. Cut the eggplant into 1-inch cubes. Lightly oil a baking sheet with 1 tablespoon of olive oil.
  3. Spread the eggplant cubes on the baking sheet and brush the tops with a little olive oil. Season with sea salt, freshly ground pepper, and a pinch of dried oregano. Bake for 30–45 minutes, until the eggplant is soft and lightly golden. Remove from the oven and set aside.
  4. Pat the beef cubes dry with paper towels, then season with salt and pepper. Lightly dust with 1–2 tablespoons of all-purpose flour, tossing to coat.
  5. In a large pot, heat 2 tablespoons of olive oil over medium-high heat. Brown the beef in batches, turning occasionally, for about 2–3 minutes per batch. Transfer the browned beef to a plate and set aside.
  6. Add the diced onion to the pot, season with salt and pepper, and sauté for 1–2 minutes. Add the sliced garlic, cumin, cinnamon stick, nutmeg, and dried oregano. Stir and cook for another 2 minutes until fragrant.
  7. Add the San Marzano tomatoes, crushing them gently with a spoon to break up any large pieces. Stir well. Return the beef to the pot along with ½ cup of water and the fresh thyme and oregano sprigs. Stir gently, cover, and simmer over low heat for 1 hour.
  8. Add the roasted eggplant cubes to the stew. Stir gently, cover, and simmer for another 30–45 minutes, until the beef is tender and almost falling apart. Adjust seasoning with salt and pepper. Serve over mashed potatoes or fries.

💡 Tips

  • For extra flavor, let the stew rest for 10 minutes before serving.
  • You can substitute beef chuck with lamb shoulder for a different twist.
  • If you prefer a thicker sauce, remove the lid during the last 15 minutes of simmering.
