This simple yet flavorful bulgur pilaf is a staple in Mediterranean cuisine, offering a nutty texture and a savory depth from the vegetables and tomato. It's a versatile side that pairs well with grilled meats, stews, or as a standalone light meal.
Ready in just 40 minutes, this dish is perfect for busy weeknights. The bulgur absorbs the broth and tomato sauce, becoming fluffy and aromatic. Adjust the seasoning to your taste, and feel free to add a squeeze of lemon for extra brightness.
Ingredients
Converted amounts are rounded.
Method
- In a medium pot, heat the olive oil over medium heat.
- Add the chopped onion and red bell pepper, and sauté until soft, about 5 minutes.
- Stir in the rinsed bulgur wheat and cook for 1 minute, stirring constantly.
- Pour in the vegetable broth (or water) and the tomato sauce.
- Bring to a simmer, then reduce heat to low, cover, and let it cook for about 20 minutes, or until the liquid is absorbed and the bulgur is tender.
- If the liquid is absorbed before the bulgur is fully cooked, add a little hot water as needed.
- If using commercial vegetable broth that contains salt, do not add additional salt.
- Fluff the bulgur with a fork and serve with freshly ground black pepper.
💡 Tips
- For extra flavor, use a good quality vegetable broth instead of water.
- You can add a squeeze of lemon juice before serving for a fresh touch.
- Leftovers can be stored in the fridge for up to 3 days and reheated with a splash of water.
