Kale Guacamole with a Twist

This vibrant guacamole gets an extra boost of green and nutrients from fresh kale, making it a delicious and healthy appetizer. It's quick to whip up in a food processor and yields about 3 1/2 cups.

Guacamole is a classic crowd-pleaser, but this version takes it to the next level by folding in tenderized kale. The kale not only adds a beautiful deep green color but also a subtle earthy flavor that pairs perfectly with creamy avocado and zesty lime.

This recipe is incredibly simple: massage the kale to soften it, then blend everything together in a food processor. The result is a smooth, vibrant dip that's perfect for parties, game day, or a healthy snack. Serve it with tortilla chips, veggie sticks, or as a topping for tacos and burrito bowls.

Method

  1. Prepare the kale: remove the tough ribs with a chef's knife and discard them. Chop the kale into small, bite-sized pieces. Sprinkle lightly with salt and a squeeze of lime juice (about 1 teaspoon). Massage the kale by scrunching it in your hands until it turns darker green and becomes fragrant (this softens it and reduces bitterness). Measure out 1 cup (packed) of the massaged kale and set aside.
  2. Scoop the avocado flesh into the bowl of a food processor, discarding any bruised or browned spots. Add 3 tablespoons of lime juice and the salt. Blend until fairly smooth, stopping to scrape down the sides as needed.
  3. Add the massaged kale, red onion, cilantro, and jalapeño. Blend until mostly smooth, with only tiny bits of kale and onion remaining (or completely smooth if you prefer). Taste and adjust with additional salt and/or lime juice if necessary, blending again. Serve immediately.

💡 Tips

  • If you don't have a food processor, you can finely chop the kale and mash the avocados by hand for a chunkier texture.
  • For a spicier kick, leave some of the jalapeño seeds in.
  • To store leftovers, press plastic wrap directly onto the surface of the guacamole to prevent browning.
