Keto BBQ Chicken Crust Pizza with Bacon

A low-carb pizza with a savory chicken crust, tangy BBQ sauce, melted cheddar, and crispy bacon.

If you're following a keto lifestyle and craving pizza, this recipe is a game-changer. Instead of a traditional dough, we use a simple mixture of ground chicken and Parmesan cheese to create a protein-packed, gluten-free crust that bakes up golden and firm enough to hold all your favorite toppings.

The smoky-sweet BBQ sauce is made from everyday ingredients and pairs beautifully with the rich cheddar and crisp bacon. This pizza is quick to prepare and delivers all the satisfaction of a classic pie—without the carbs.

Method

  1. Preheat the oven to 425°F. If you have a pizza stone, place it in the oven to heat.
  2. In a large bowl, combine the ground chicken, salt, and shredded Parmesan. Use your hands to mix until well combined.
  3. Grease a sheet of parchment paper and place it on an un-rimmed baking sheet or a pizza peel. Transfer the chicken mixture onto the parchment and press it with your hands into a 12-inch (30 cm) circle or a 10-inch (25 cm) square. Slide the parchment with the crust onto the hot pizza stone (or directly onto a baking sheet). Bake for 12–15 minutes, until the crust is light golden brown and the chicken is cooked through.
  4. Meanwhile, prepare the BBQ sauce: In a small bowl, combine the tomato sauce, cider vinegar, liquid smoke, onion powder, and garlic powder. Mix well.
  5. Remove the crust from the oven. Spread the BBQ sauce evenly over the top, then sprinkle with the cheddar cheese and, if desired, slices of red onion. Return to the oven and bake for 7–10 minutes, until the cheese is melted and bubbly.
  6. While the pizza bakes, cook the bacon: Dice the bacon and place it in a cast-iron skillet over medium-high heat. Cook, stirring occasionally, until crispy, about 5 minutes. Drain on paper towels.
  7. Remove the pizza from the oven and garnish with the crispy bacon. Slice and serve immediately.

💡 Tips

  • For a crispier crust, let the base cool for 2–3 minutes after the first baking before adding toppings.
  • You can use any shredded melting cheese in place of cheddar, such as mozzarella or Gouda.
  • If you don't have liquid smoke, substitute with 1/2 teaspoon smoked paprika for a similar smoky flavor.
