This one-pan farro recipe is a weeknight lifesaver: it's hearty, flavorful, and comes together in about 40 minutes. The nutty farro absorbs the savory broth, while the mushrooms and peas add texture and a touch of sweetness.
It's a versatile dish that pairs beautifully with grilled chicken or fish, or you can enjoy it on its own with a sprinkle of Parmesan. The fresh mint at the end brightens everything up, making it feel light and vibrant.
Method
- In a deep skillet with a lid, heat 2 tbsp olive oil over medium-high heat.
- Add the green onions, mushrooms, and peas; sauté for 3-4 minutes.
- Add the garlic and stir briefly until fragrant.
- Add the farro, paprika, thyme, and a pinch of salt and pepper. Cook for 4-5 minutes, stirring regularly.
- Meanwhile, bring the vegetable broth to a boil in a separate pot.
- Pour the boiling broth into the farro mixture and stir.
- Bring to a boil, then reduce heat to medium-low. Cover and simmer for 20 minutes, until the liquid is absorbed.
- Remove from heat, stir in the Parmesan and fresh mint. Serve warm.
💡 Tips
- For extra flavor, use chicken broth instead of vegetable broth.
- If you prefer a creamier texture, stir in a splash of heavy cream at the end.
- Leftovers can be stored in the fridge for up to 3 days; reheat with a little broth.
