Ingredients

Method
- Prepare the brownie mix according to the package directions and bake. Let the brownies cool completely, then refrigerate for about 20 minutes until firm.
- While the brownies chill, use a melon baller or a small teaspoon to hollow out the top and center of each strawberry. Place each strawberry upright in the cup of a mini muffin tin.
- In a large bowl, beat the cream cheese with an electric mixer until soft. Add the mini chocolate chips, vanilla extract, and the cooled brownies. Mix until the mixture has a thick, dough-like consistency.
- Take about 1 tablespoon of the brownie mixture and roll it into a ball. Press one brownie truffle into the hollow of each strawberry. Repeat with the remaining strawberries and mixture.
- Place the stuffed strawberries in the refrigerator for 30 minutes to firm up.
- Put the dark chocolate in one small bowl and the white chocolate in another. Microwave each bowl separately in 30-second bursts, stirring after each, until melted and smooth (about 1 minute total per bowl).
- Dip the top of one strawberry into the melted white chocolate, then insert a cookies-and-cream dipped cookie stick through the top. Sprinkle with crushed chocolate sandwich cookies. Repeat with 7 more strawberries.
- Dip the top of another strawberry into the melted dark chocolate, insert a chocolate-dipped cookie stick, and sprinkle with red sprinkles. Repeat with 7 more strawberries.
- Dip the top of another strawberry into the melted white chocolate, insert a strawberry-dipped cookie stick, and sprinkle with crushed freeze-dried strawberries. Repeat with the remaining 7 strawberries.
- Let the chocolate set for about 5 minutes at room temperature, then serve.
💡 Tips
- For best results, use strawberries that are large and firm so they hold their shape.
- You can prepare the brownie truffle mixture and hollow the strawberries a day ahead; keep them refrigerated separately.
- If the chocolate coating thickens while you work, reheat it in the microwave for a few seconds.
