Ingredients
Converted amounts are rounded.
Method
- Preheat the oven to 350°F (fan).
- In a bowl, combine the butter, granulated sugar, and brown sugar. Mix with your hands (wearing gloves) until the butter softens and the mixture is creamy.
- Add the egg and vanilla extract, and continue mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, salt, and lemon zest.
- Add the dry ingredients to the butter mixture and stir until just combined.
- Finely chop the dates, raisins, and pistachios. Add them to the dough along with the granola.
- Mix everything together and shape the dough into round cookies, each weighing about 40 g.
- Divide the cookies between two baking sheets lined with parchment paper. Bake for 12-15 minutes, until golden and spread.
- Remove the baking sheets from the oven and let the cookies cool completely on a wire rack. Then serve.
💡 Tips
- For extra flavor, toast the pistachios lightly before chopping.
- If the dough is too sticky, chill it for 15 minutes before shaping.
- Store the cookies in an airtight container for up to 5 days.
