This is one of those no-fuss meals that comes together in a flash, using just a handful of everyday ingredients. The broccoli cooks right along with the pasta, saving time and washing up, while the garlicky olive oil and salty cheese make a simple, satisfying sauce.
It's a versatile dish that works as a main course or a hearty side. Feel free to use any short pasta you have on hand, and adjust the red pepper flakes or cheese to your taste.
Ingredients
Converted amounts are rounded.
Method
- Fill a large pot with water, add a generous pinch of salt, and bring to a boil.
- Once the water is boiling, add the pasta and the broccoli florets together. Cook according to the pasta package instructions until al dente.
- Just before the pasta is done, scoop out about 1 cup of the cooking water and set it aside. Then drain the pasta and broccoli.
- Put the pot back on the stove over high heat and add 1 tablespoon of olive oil. When the oil is hot, add the garlic and cook until it turns golden. Lower the heat to low and return the pasta and broccoli to the pot.
- Stir everything well, then add the remaining olive oil, the grated cheese, and salt and pepper to taste. Mix thoroughly, using a spoon to break up any large broccoli pieces.
- Pour in 1/2 cup of the reserved pasta water and stir well. If the pasta seems dry, add a little more water.
- Serve in pasta bowls with extra grated cheese on the side.
💡 Tips
- For a gluten-free version, use brown rice or quinoa pasta.
- Don't skip reserving the pasta water; it helps create a silky sauce.
- If you like a little heat, add a pinch of red pepper flakes with the garlic.
