This is the ultimate pantry-friendly meal: a humble pack of instant noodles gets a serious upgrade with pantry staples like canned tuna, kimchi, and a perfectly cooked egg. The result is a comforting, savory noodle soup that tastes far more complex than the effort it takes.
Perfect for busy weeknights or a lazy lunch, this recipe is all about simplicity and speed. With just a few minutes of active cooking, you'll have a steaming bowl of ramen that's both satisfying and surprisingly nutritious.
Method
- Gather all the ingredients. Use an electric pot or a regular saucepan on the stove.
- Slice the green onion diagonally into thin pieces.
- Pour the water into the pot or saucepan, cover, and bring to a boil over medium-high heat (or Mode II/600W on an electric pot).
- Once boiling, add the seasoning packet(s) from the ramen package and stir.
- Drain the tuna and add it to the pot. Mix well and bring back to a boil, uncovered.
- Add the ramen noodles. Set a timer for 5 minutes. Use chopsticks to submerge the noodles, flip them once, and loosen them. If boiling too vigorously, reduce heat to medium (or Mode I/250W).
- After 2 minutes, add the kimchi and stir.
- Crack the egg onto the noodles and let it cook in the simmering soup without disturbing, about 2–3 minutes. Just before the timer ends, drizzle in the sesame oil.
- Sprinkle some sliced green onion over the soup. When the timer beeps, transfer everything to a large bowl.
- To serve, top with sesame seeds and extra green onion. Serve with extra kimchi on top or on the side. Enjoy immediately—leftovers are not recommended.
💡 Tips
- For a richer flavor, use tuna packed in olive oil and don't drain it completely—just shake off excess oil.
- If you prefer a runny yolk, cook the egg for only 2 minutes.
- Add a splash of soy sauce or chili flakes for extra heat.
