This algin bath is the foundation for many modernist techniques, especially spherification. By blending algin with water and allowing it to hydrate completely, you get a smooth, air-free gel that can be used to create liquid-filled pearls or to thicken sauces elegantly.
The key is patience: the mixture must rest in the refrigerator for a full 48 hours to let trapped air bubbles escape and the algin to fully rehydrate. Once ready, it can be stored for several days in the fridge and used as needed.
Ingredients
Converted amounts are rounded.
Method
- Measure the water and algin exactly.
- Pour the water into a blender and add the algin.
- Blend on high speed until the mixture is completely smooth and no lumps remain, about 30 seconds.
- Transfer the mixture to a clean container, cover it, and refrigerate.
- Let it rest in the refrigerator for 48 hours. During this time the air bubbles will rise and disappear, and the algin will fully hydrate.
- After 48 hours, the algin bath is ready to use. It will be a clear, slightly viscous gel.
💡 Tips
- Use a digital scale for both ingredients to ensure accuracy.
- If small air bubbles persist after blending, let the mixture sit for an extra 12-24 hours.
- Store the algin bath in an airtight container in the refrigerator for up to 2 weeks.
