This simple cake is a staple in many kitchens, perfect for breakfast, tea time, or a quick dessert. It requires no electric mixer, just a whisk and a bowl, making it ideal for beginner bakers or for making with kids.
The secret to its fluffy texture lies in the method: mixing the butter and sugar until creamy, then adding the dry and wet ingredients alternately. The orange juice adds a subtle freshness, and the result is a moist, tender crumb that stays soft for days.
Ingredients
Converted amounts are rounded.
Method
- Preheat the oven to 325°F (fan).
- Butter a round 25 cm cake pan and dust with flour, tapping out the excess.
- Sift the flour into a bowl and set aside.
- In a large bowl, whisk the butter until smooth.
- Add the sugar and continue whisking until the sugar is absorbed into the butter.
- Add the eggs, vanilla, salt, and orange zest (if using), and mix until combined and creamy.
- Dissolve the baking soda in the orange juice and add to the mixture, stirring.
- Add half of the flour and mix until no lumps remain.
- Alternately add the remaining flour and the milk, mixing with a whisk or spatula.
- Pour the batter into the prepared pan and place on the middle rack of the oven.
- Bake in the preheated oven for about 45 minutes.
- Check the center with a knife; if it comes out clean, the cake is done.
- Let the cake cool in the pan for 10 minutes.
- Turn it out onto a wire rack to cool completely.
💡 Tips
- For extra flavor, add the zest of the orange to the batter.
- Make sure all ingredients are at room temperature for a smoother batter.
- If the cake browns too quickly, cover loosely with foil.
