FOR EACH PORTION
Converted amounts are rounded.
Method
- Open the tins of prunes and pour them along with their juice into a medium saucepan.
- Add the Earl Grey teabags, the pinch of ground cloves, and the piece of ginger (peeled and sliced).
- Bring the mixture to a gentle simmer over medium heat, then reduce the heat to low and cook for 15–20 minutes, until the prunes are tender and the liquid has slightly thickened.
- Remove the teabags and the ginger pieces, then let the compote cool slightly.
- While the compote is cooling, toast the slice of seeded wholemeal bread until golden and crisp.
- Peel and slice the banana.
- To assemble each portion, place the toast on a plate, spoon a generous amount of the warm prune compote over it, then top with a heaped tablespoon of Greek yogurt, the banana slices, and a sprinkle of flaked almonds.
- Serve immediately.
💡 Tips
- For a vegan version, use plant-based yogurt instead of Greek yogurt.
- The prune compote can be made ahead and stored in the fridge for up to 3 days.
- If you prefer a sweeter compote, add a teaspoon of honey or maple syrup while cooking.
