This stovetop method for steel cut oats yields a bowl that’s creamy, tender, and full of nutty flavor. The trick is to first bring the liquid to a boil, then simmer the oats gently while stirring occasionally.
Healthy and low in calories, these oats are naturally high in fiber and completely vegan if you use plant-based milk. You can prep them ahead and add any toppings you like – fruit, nuts, seeds, or a drizzle of maple syrup.

Method
- In a medium-large saucepan, combine 2 1/2 cups water and 1 cup milk. Bring to a boil over high heat.
- As soon as the liquid boils, stir in the steel cut oats and salt. Return the mixture to a full boil, then immediately reduce the heat to low so the oats are at a gentle simmer. Watch carefully because oats can foam up and boil over; if they start to foam, lift the pan off the heat for a few seconds, then return it.
- Let the oats simmer gently for 20 minutes, stirring occasionally and scraping the bottom of the pan to prevent sticking.
- After 20 minutes, check the texture. For softer, creamier oats, cook 5–10 minutes more, stirring every few minutes. If the oatmeal becomes too thick, add a splash of extra water or milk to reach your desired consistency.
- Remove the pan from the heat and let the oatmeal sit for a few minutes to thicken further. Serve hot with your favorite toppings.
💡 Tips
- Don't skip the salt – it enhances the oat flavor and balances the sweetness of your toppings.
- For extra creaminess, use whole milk or a higher-fat plant milk like oat or soy.
- Make ahead: cook, cool, and store in the fridge for up to 5 days; reheat with a splash of milk or water.
