This is a classic Greek comfort food that comes together in just 30 minutes. The tangy trahanas absorbs the tomato sauce beautifully, creating a creamy, porridge-like texture.
Feel free to experiment with the cheese – feta or halloumi work wonderfully, or even add some sausage for a heartier meal. The fresh mint adds a bright, aromatic note that balances the richness.
Ingredients
Converted amounts are rounded.
Method
- In a deep pot, combine the grated tomato, olive oil, salt, and pepper. Bring to a boil over high heat and cook for about 5 minutes, until the sauce thickens slightly.
- Add the hot water and let it come to a boil again, about 2 minutes. Then, stir in the trahanas.
- Cook for 10 minutes, stirring frequently, until the trahanas swells and the mixture becomes thick and porridge-like.
- Remove from the heat. Add the crumbled cheese, chopped mint, and some freshly ground pepper. Stir gently and serve immediately.
💡 Tips
- For a richer flavor, use homemade chicken or vegetable broth instead of water.
- If the trahanas becomes too thick, add a splash of hot water to loosen it.
- Serve with a drizzle of extra virgin olive oil and extra mint on top.
