Ingredients
Converted amounts are rounded.
Method
- Preheat oven to 350°F. Grease a 10-inch ovenproof skillet with cooking spray.
- In a large bowl, using a hand mixer, beat the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the eggs and vanilla extract and beat until well combined.
- In a separate bowl, whisk together the flour, crushed graham crackers, baking soda, and salt. Add the dry ingredients to the wet mixture and stir until just combined. Fold in most of the chocolate chips, most of the broken Hershey's pieces, and most of the mini marshmallows.
- Press the dough evenly into the prepared skillet. Top with the remaining chocolate chips, Hershey's pieces, and mini marshmallows.
- Bake until the center is almost set, 22 to 25 minutes.
- Meanwhile, cut the large marshmallows in half horizontally, keeping the tops and bottoms intact. After the initial bake, arrange the halved marshmallows cut side-down around the edge of the cookie.
- Return the skillet to the oven and bake until the marshmallows are puffed and golden, 5 to 8 minutes more.
- Serve warm or at room temperature.
💡 Tips
- For easier removal, line the skillet with parchment paper before greasing.
- Use a kitchen torch to toast the marshmallows for an extra smoky flavor.
- Serve with vanilla ice cream to balance the sweetness.
