Method
- Preheat the oven to 350°F. Cook the jumbo pasta shells according to the package directions until al dente. Drain and set aside.
- In a large bowl, combine the shredded mozzarella, cubed turkey, cooked stuffing, and chopped green onions. Mix well.
- In a small bowl, stir together the mashed sweet potatoes and the chili powder (if using).
- Stuff each cooked shell with 2 tablespoons of the turkey-stuffing mixture and then top with 2 teaspoons of the sweet potato mixture.
- Arrange the stuffed shells in a greased 11x7-inch baking dish. Sprinkle the grated Parmesan cheese evenly over the top.
- Cover the dish with foil and bake for 15-20 minutes, until heated through and the cheese is melted.
- Serve the stuffed shells warm, with the heated turkey gravy on the side or drizzled over the top.
💡 Tips
- For a crispier top, remove the foil during the last 5 minutes of baking.
- You can use leftover chicken instead of turkey.
- If you don't have turkey gravy, use chicken gravy or a simple béchamel sauce.
