This salad brings together earthy lentils, crisp vegetables, and a bright, citrusy dressing for a dish that's both nourishing and delicious. It's quick to assemble and tastes even better the next day, making it a great make-ahead option.
Feel free to adapt it to the seasons—add pomegranate seeds when they're available, or keep it simple. For a creamy touch, sprinkle with feta cheese, or leave it out for a fully vegan version.
Ingredients
Converted amounts are rounded.
Method
- Cook the lentils: In a saucepan, combine the lentils with 3 cups of water and a pinch of kosher salt. Bring to a boil, then cover and reduce heat to medium-low. Simmer until the lentils are fully tender, about 25 to 45 minutes depending on the type. Check occasionally and add water if they seem dry; they should absorb most of the water. Drain and let cool.
- In a large mixing bowl, combine the cooked lentils with the chopped onion, cucumber, spinach, parsley, and pomegranate seeds. Toss gently.
- Make the dressing: In a small bowl or measuring cup, whisk together the lime juice, olive oil, honey, cumin, allspice, and a pinch of salt and pepper. Pour over the salad and toss to coat.
- Sprinkle with crumbled feta, if using, and let the salad sit for a few minutes so the flavors meld before serving.
💡 Tips
- Use black lentils if you prefer a firmer texture; they hold their shape well.
- For a vegan version, replace honey with maple syrup or agave nectar.
- This salad keeps well in the fridge for up to 3 days—perfect for meal prep.
