The classic Greek salad dressing, or ladoxido, is the everyday base for a traditional horiatiki (village) salad. It's a simple emulsion of olive oil, red wine vinegar, dried oregano, and sea salt, shaken together just before serving.
Below you'll find the classic version plus two variations: one with lemon and mustard for a tangier kick, and another with garlic and fresh herbs for extra depth. All are quick to make and keep well in the fridge for up to a week.
Ingredients
Converted amounts are rounded.
Method
- Place all the ingredients in a jar with a tight-fitting lid.
- Seal the jar and shake vigorously until the dressing is well combined and emulsified.
- Taste and adjust: add more vinegar for extra tang, or more olive oil to mellow the flavor.
- Use immediately, or store in the refrigerator for up to 1 week. Shake well before each use.
💡 Tips
- For the best flavor, use a good quality extra virgin olive oil and authentic Greek oregano.
- If you prefer a milder dressing, let it sit for 10 minutes after shaking so the oregano softens.
- This dressing also works beautifully as a marinade for grilled vegetables or as a dip for crusty bread.
