Method
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice until well combined. Set aside.
- Combine the pumpkin puree, brown sugar, egg, oil, and milk in a blender. Blend on high speed for about 45 seconds until smooth. If you don't have a blender, whisk these wet ingredients together vigorously in a separate bowl until thoroughly combined.
- Pour the blended wet ingredients into the dry ingredients. Whisk gently until just combined, ensuring no dry flour remains at the bottom. A few lumps are perfectly fine, and the batter will be quite thick. If using, gently fold in the chocolate chips.
- Heat a lightly greased griddle or large skillet over medium heat. Pour or scoop about 1/4 cup of batter for each pancake onto the hot surface. Cook for 2-3 minutes, or until bubbles appear on the surface and the edges look set. Flip and cook the other side for another 1-2 minutes until golden brown and cooked through.
- Repeat with the remaining batter, adding more butter or spray to the cooking surface as needed between batches. Keep the cooked pancakes warm in a preheated oven at 200°F while you finish the rest.
- Serve the pancakes immediately with your favorite toppings, such as butter and maple syrup.
💡 Tips
- For the smoothest batter, especially if using fresh pumpkin, a blender is recommended.
- Don't overmix the batter once the wet and dry ingredients are combined; a few lumps are fine and lead to tender pancakes.
- Keep the cooked pancakes warm in a low oven (around 200°F/200°F) to serve them all at once.
