These feta and pepper phyllo rolls are a beloved Greek meze, combining the salty creaminess of feta with the sweet smokiness of roasted red peppers. The filling is simple yet packed with flavor, wrapped in layers of buttery, crispy phyllo.
They make a wonderful appetizer for gatherings, a delicious snack any time of day, or a flavorful side alongside salads and soups. The rolls are baked until golden and can be served warm or at room temperature.
Method
- Heat the olive oil in a deep skillet over medium heat. Add the sliced onions and cook for a few minutes until they become translucent.
- Add the sliced roasted red peppers and cook until they soften slightly.
- Season with salt and pepper, then remove from heat and sprinkle with the hot paprika.
- Stir in the crumbled feta, beaten eggs, and breadcrumbs. Mix well and let the filling cool completely; it will firm up as it cools.
- Lay the phyllo sheets on your work surface. Cut the stack lengthwise into two equal strips. Place the two strips on top of each other.
- Take one piece and brush it generously with olive oil. Fold it lengthwise in half. Place a spoonful of filling near one end and roll it up into a small cylinder (like a flûte).
- Arrange the rolls seam-side down on a baking sheet lined with parchment paper. Brush the tops with a little olive oil.
- Bake in a preheated oven at 350°F with fan for about 20 minutes, until golden brown and crispy.
- Serve warm or at room temperature. They are perfect alongside salads, soups, or as a delicious snack any time of day.
💡 Tips
- For extra flavor, add a pinch of dried oregano or thyme to the filling.
- Make sure the filling is completely cool before rolling; it will be easier to handle.
- If you prefer, you can brush the phyllo with melted butter instead of olive oil for a richer taste.
