These brownie ice cream sandwiches are the ultimate summer indulgence. They're made with simple vegan brownies and your favorite dairy-free ice cream, making them perfect for anyone avoiding dairy or eggs.
The combination of chewy brownie and cold, creamy ice cream is irresistible. Plus, they're incredibly easy to assemble and can be made ahead for a crowd-pleasing dessert.
Ingredients
Converted amounts are rounded.
Method
- Take the ice cream out of the freezer and let it soften at room temperature for a few minutes.
- Meanwhile, using a serrated knife, carefully slice each brownie in half horizontally to create two thin layers.
- Line a 1/2-cup measuring cup with plastic wrap, leaving some overhang. Pack the softened ice cream tightly into the cup, then fold the overhanging plastic wrap over the top and press to seal. Remove the wrapped ice cream from the cup and gently shape it into a disc with your hands. Place the disc on a plate or tray and repeat with the remaining ice cream to make four discs total. Freeze the discs for 15 minutes, or until they are firm enough to handle.
- Unwrap the ice cream discs and place one on the bottom half of a brownie. Top with the other brownie half and gently press the two halves together to form a snug sandwich. Serve immediately, or wrap each sandwich in plastic wrap and store in a freezer-safe bag or container for up to a week. Best enjoyed fresh.
💡 Tips
- For easier slicing, use a serrated knife and cut the brownies while they are slightly chilled.
- If the ice cream gets too soft, pop the discs back in the freezer for a few minutes before assembling.
- Customize with your favorite dairy-free ice cream flavor, like chocolate, vanilla, or mint chip.
