This smoothie is a powerhouse of nutrients, combining the earthy sweetness of carrots with the tropical flavors of pineapple and banana. Fresh ginger and turmeric add a warm, spicy kick and are known for their anti-inflammatory properties.
Making your own carrot juice at home ensures the freshest, most vibrant flavor, and the leftover pulp can be used in baked goods or other recipes. This smoothie is naturally vegan, gluten-free, and dairy-free, making it a great choice for a quick, healthy boost any time of day.
Ingredients
Converted amounts are rounded.
Method
- Place the carrots and filtered water in a high-speed blender. Blend on high until completely pureed and smooth. If needed, add a little more water to help it blend, and scrape down the sides as necessary.
- Drape a large, thin dish towel over a mixing bowl and pour the carrot mixture over it. Gather the corners of the towel and twist to squeeze out as much juice as possible. Reserve the pulp for smoothies or baked goods like carrot muffins.
- Transfer the freshly extracted carrot juice to a mason jar. It will keep for several days, though it's best when used fresh.
- Add all the smoothie ingredients to the blender: the carrot juice, banana, pineapple, ginger, turmeric, lemon juice, and almond milk. Blend on high until creamy and smooth. If it's too thick, add more carrot juice or almond milk, and scrape down the sides as needed.
- Taste and adjust the flavors: add more banana or pineapple for sweetness, lemon juice for acidity, ginger for a spicy kick, and turmeric for warmth.
- Pour the smoothie into two glasses and serve immediately. It's best enjoyed fresh.
💡 Tips
- For a thicker smoothie, use frozen banana and pineapple.
- If you don't have a high-speed blender, soak the carrots in water for a few minutes before blending.
- The leftover carrot pulp can be added to pancake batter or used in veggie burgers.
