Perfectly Juicy Roast Turkey with Rich Pan Gravy

A foolproof roast turkey with citrus, garlic, and herb butter, plus a silky gravy made from the pan drippings. Ideal for festive dinners.

This roast turkey is the centerpiece you've been dreaming of: golden, crisp skin, impossibly juicy meat, and a rich, savory gravy that ties everything together. The secret lies in a generous herb butter rubbed under the skin and a slow roast that keeps every bite moist.

The vegetables in the pan do double duty—they flavor the drippings for the gravy and become a delicious side. With clear steps and plenty of resting time, this recipe is forgiving enough for beginners yet impressive enough for a holiday feast.

Ingredients

Servings 8

    Turkey & Vegetables

    Herb Butter

    Cavity & Gravy

    Converted amounts are rounded.

    Method

    1. Preheat the oven to 325°F. Remove the neck and giblets from the turkey cavity. Pat the turkey dry inside and out with paper towels. Do not rinse the turkey.
    2. With your fingers, gently loosen the skin from the breast to create a pocket for the herb butter.
    3. Place the onions, carrots, celery, and 6–8 garlic cloves in a large roasting pan. Season lightly with salt and pepper, then pour the chicken broth over the vegetables. Set the turkey on top.
    4. In a small bowl, mix the cavity seasonings: salt, cumin, and red pepper flakes. Sprinkle this mixture inside the turkey cavity, then stuff with the garlic head (or cloves) and the fresh herbs.
    5. In another bowl, combine all the herb butter ingredients (melted butter, salt, pepper, grated garlic, oregano, lemon zest, lemon juice, orange juice) and whisk until well blended.
    6. Rub the herb butter all over the turkey, especially under the breast skin. Season the outside generously with salt, black pepper, and the 1 tablespoon of dried oregano.
    7. Cross the legs and tie them with kitchen twine. Tuck the wings under the turkey.
    8. Loosely cover the turkey with parchment paper, then with aluminum foil. Roast covered for 2½ hours.
    9. Remove the foil and parchment. Continue roasting uncovered for another 1½–2 hours, basting with pan juices every 20 minutes, until the internal temperature reaches 165°F (check the thickest part of the breast and inner thigh, away from bone).
    10. For the last 45 minutes, increase the oven temperature to 350°F to crisp the skin. Once done, transfer the turkey to a cutting board and rest for at least 30 minutes.
    11. Strain the pan juices into a gravy separator (or chill in a bowl and skim the fat). Combine the defatted juices with enough chicken stock to make 4 cups total.
    12. Melt the 4 tablespoons butter in a saucepan over medium heat. Whisk in the flour and cook for 3–4 minutes. Gradually whisk in the liquid, season with salt and pepper, and bring to a boil. Simmer until thickened, then stir in the lemon juice. Adjust seasoning and serve with the carved turkey.

    💡 Tips

    • For extra flavor, add a few sprigs of fresh thyme to the roasting pan.
    • If you don't have a gravy separator, chill the juices and skim the fat with a spoon.
    • Letting the turkey rest is crucial for juicy meat—don't skip it!
