Skip the takeout and whip up this easy teriyaki chicken in just 15 minutes. No marinating needed—just stir-fry the chicken, make a quick sauce from pantry staples, and dinner is ready.
The sauce is a perfect balance of salty soy, sweet brown sugar, and a touch of acidity from sake or vinegar. Serve it over steamed rice with broccoli for a complete, satisfying meal.
Ingredients
Converted amounts are rounded.
Method
- Heat the cooking oil in a large pan over medium heat. Add the chicken pieces and stir-fry, turning occasionally, until they are lightly browned and crispy.
- In a small bowl or jug, whisk together the soy sauce, brown sugar, sake (or vinegar), mirin, and sesame oil until combined. Set aside.
- Push the chicken to the sides of the pan, add the garlic to the center, and sauté for about 30 seconds until fragrant. Pour the sauce over the chicken and stir continuously until the sauce thickens into a shiny glaze, about 2-3 minutes. If the sauce doesn't thicken enough, mix the cornstarch with 2 teaspoons of water and stir it in.
- Add the steamed broccoli and toss everything to coat. Garnish with sliced green onion and serve hot over steamed rice.
💡 Tips
- For extra crispiness, pat the chicken pieces dry with paper towels before cooking.
- If you don't have mirin, use a dry white wine or sherry, and add a pinch of sugar if needed.
- Serve with steamed jasmine rice and a sprinkle of sesame seeds for a restaurant-style finish.
