Ingredients
Converted amounts are rounded.
Method
- Cook the brown rice according to package instructions, then drain and set aside.
- Heat a splash of olive oil in a large skillet over medium heat. Add the beef mince and cook, breaking it up with a spoon, until browned all over.
- Stir in the curry powder, onion, garlic, sweet potato, and red chilli. Cook for 5–7 minutes, until the onion is soft and the sweet potato begins to soften.
- Add the cooked rice and half of the chopped coriander. Season with salt and pepper, then remove from heat and let the filling cool slightly.
- Preheat your oven to 350°F. Line a baking sheet with parchment paper.
- Lay one sheet of filo pastry on a clean work surface. Brush lightly with olive oil. Cut the sheet into 3 long strips.
- Place a spoonful of filling at one end of each strip. Fold the corner over the filling to form a triangle, then continue folding the strip to make a triangular parcel. Repeat with the remaining filling and pastry.
- Place the samosas on the prepared baking sheet. Brush the tops with a little oil and sprinkle with black onion seeds if using.
- Bake for 25–30 minutes, until golden and crisp.
- While the samosas bake, prepare the sauce: grate the cucumber, squeeze out excess water, and mix with the yogurt, lemon juice, and remaining coriander. Season with salt.
- Serve the samosas warm with the cucumber yogurt sauce and hot chilli sauce on the side.
💡 Tips
- If the filo pastry dries out, cover it with a damp cloth while assembling.
- You can prepare the samosas ahead and refrigerate them before baking.
- For a vegetarian version, omit the beef and add extra sweet potato or chickpeas.
