Ingredients
Converted amounts are rounded.
Method
- Position a rack in the top third of your oven and preheat to 400°F. Lightly coat a baking sheet with cooking spray. In a large bowl, combine the finely chopped onion, eggs, ground beef, bread crumbs, sliced scallions, and kosher salt. Mix everything together with your hands until just combined, being careful not to overwork the mixture.
- Shape the beef mixture into 16 to 18 meatballs, each approximately 1 1/2 inches in diameter. Place them evenly spaced on the prepared baking sheet.
- Bake the meatballs for 15 to 20 minutes, or until they are nicely browned and cooked through.
- While the meatballs are baking, prepare the sauce. In a large, deep skillet over medium heat, combine the pineapple chunks with their juice, BBQ sauce, grated garlic, apple cider vinegar, soy sauce, and grated ginger. Bring the mixture to a gentle simmer.
- Reduce the heat to medium-low and let the sauce simmer for about 8 minutes, stirring occasionally, until it thickens enough to coat the back of a spoon. Add the baked meatballs to the skillet with the sauce and stir gently to ensure they are all well coated. Garnish with extra sliced scallions before serving.
💡 Tips
- For extra flavor, you can add a pinch of red pepper flakes to the sauce.
- If you prefer a thicker sauce, let it simmer for a few extra minutes.
