This sandwich is a tribute to the iconic Vietnamese banh mi, which beautifully blends French and Vietnamese culinary traditions. The spicy mayo adds a tangy kick, while the pickled carrots provide a refreshing crunch.
It's perfect for a quick lunch or a light dinner, and you can easily adjust the heat to your liking. The recipe is simple, yet the combination of flavors and textures is anything but ordinary.
Ingredients
Converted amounts are rounded.
Method
- In a small bowl, combine the shredded carrot and rice vinegar. Toss to coat and let it marinate while you prepare the other components.
- In a separate medium bowl, mix the cilantro, mayonnaise, yogurt, fish sauce, lime juice, and cayenne pepper until well combined.
- Spread 2 teaspoons of the sauce on the cut side of each baguette half.
- Add the shrimp to the remaining sauce and toss until evenly coated.
- Using a slotted spoon, remove the carrot from the vinegar and divide it among the baguettes. Discard the leftover vinegar.
- Top the carrot with the shrimp, cucumber slices, and scallion pieces.
- Cut each baguette into two 6-inch sandwiches and serve immediately.
💡 Tips
- For extra crunch, toast the baguettes lightly before assembling.
- Adjust the cayenne pepper to your preferred spice level.
- If you can't find reduced-fat mayo, regular mayo works fine.
