Ingredients
Converted amounts are rounded.
Method
- Butter an 8-inch square pan, or line it with foil and butter the foil for easier removal.
- In a heavy saucepan, combine the cream (or half-and-half), sugar, butter and salt. Heat over medium heat, stirring until the butter melts and the sugar dissolves.
- Continue heating until the mixture comes to a full rolling boil, where the entire surface is covered with vigorously popping bubbles.
- Boil without stirring for 8 to 10 minutes, or until the mixture reaches 234° to 236°F on a candy thermometer.
- Immediately remove the pan from the heat and stir in the marshmallows, peanut butter and vanilla extract until smooth.
- Pour the fudge into the prepared pan and let it cool overnight at room temperature before cutting into 1-inch squares.
💡 Tips
- For a cleaner cut, use a large knife dipped in hot water and wiped dry before each slice.
- If you don't have a candy thermometer, drop a small amount of the hot mixture into cold water; it should form a soft ball.
- Store fudge in an airtight container at room temperature for up to a week.
