This dish proves that low-carb cooking can be both simple and sophisticated. The turkey is first seared for a golden crust, then finished in the oven to keep it juicy and tender.
The creamy sauce, made with heavy cream and cream cheese, gets a tangy boost from tamari and a briny crunch from fried capers. It all comes together in about 25 minutes, making it perfect for a special weeknight meal or a festive occasion.
Ingredients
Converted amounts are rounded.
Method
- Preheat the oven to 350°F.
- In a large oven-proof skillet, melt one-third of the butter over medium heat. Season the turkey tenderloin generously with salt and pepper, then sear for 8–10 minutes, turning to brown all sides.
- Carefully transfer the skillet to the middle oven rack. Roast uncovered for about 10 minutes, or until the internal temperature reaches at least 165°F. Remove from oven, place the turkey on a serving dish, and tent loosely with foil.
- In a small saucepan, melt another third of the butter along with any drippings from the turkey. Stir in the heavy cream and cream cheese. Bring to a gentle boil, then reduce heat and simmer uncovered until thickened. Stir in the tamari, season with salt and pepper, and set aside.
- In a small skillet, melt the remaining butter over medium-high heat. Quickly sauté the capers until they become crispy.
- Slice the turkey into 1/2-inch (15 mm) slices. Arrange on a serving platter, spoon the cream cheese sauce over the top, and finish with the fried capers.
💡 Tips
- For even cooking, let the turkey rest at room temperature for 15 minutes before searing.
- If you don't have tamari, use light soy sauce instead.
- Serve with steamed green beans or a simple salad to keep the meal low-carb.
