This lentil salad is all about texture and contrast. The soft, earthy lentils pair beautifully with crunchy cucumber, sharp red onion, and sweet, sticky Medjool dates. A handful of fresh parsley and a zesty lemon vinaigrette tie everything together, making it a salad that’s both satisfying and refreshing.
What makes this recipe even better is how well it keeps. Unlike many salads that wilt or get soggy, this one holds up beautifully in the fridge for up to a week. It’s perfect for meal prep, a quick lunch, or a light dinner alongside grilled protein.
Ingredients
Converted amounts are rounded.
Method
- Cook the lentils. In a medium saucepan, add the lentils, water, and bay leaf. Bring the water to a boil, then reduce the heat to very low, cover the pot, and simmer for 16 to 20 minutes. The lentils should be soft but not mushy.
- Drain the lentils and let them cool in the fridge for a few minutes.
- Assemble the salad. In a large bowl, combine the cooled lentils with the finely diced cucumber, red onion, dates, and parsley.
- Add the dressing. Drizzle the lemon vinaigrette over the salad and toss everything together until well coated.
💡 Tips
- For a more intense flavor, let the salad rest for 10–15 minutes after dressing to allow the lentils to absorb the vinaigrette.
- If you don't have Medjool dates, regular dates or dried figs can be used instead.
- This salad is delicious with crumbled feta cheese — add it after tossing.
